This has been a rotation in our weekly meals for a few years now and it’s so easy and so delicious. One thing that has always annoyed me as a working mom is the idea of a 30 minute meal. I don’t think there is truly such a thing as a 30 minute meal, unless you count grilled cheese or microwaving leftovers. This recipe comes pretty darn close to 30 minutes, but it really depends on how many times your kids interrupt you while you are making it.
Ingredients
- 1 lb. bow tie pasta (or penne)
- 5-6 chicken sausage links (any flavor, but my favorite is andouille style or cajun), cut into 1/4 inch round slices
- 1-2 tablespoons of butter
- 2 bell peppers, chopped or sliced in strips (any color)
- 1 large onion, diced
- 1 cup chicken or beef broth
- 1/2 cup shredded Parmesan
- salt and pepper to taste

In a pot of salted, boiling water, cook the pasta until it’s al dente.
While the pasta is cooking, heat up a cast-iron skillet on medium-high heat, add the olive oil and diced onions. Let the onions cook for 2-3 minutes and then add the chicken sausage. Reduce the heat to medium and cook the sausage for 4-5 minutes so it gets a little browned on each side.
Add the peppers and cook for 2-3 minutes. Make a little space in the middle of the pan and add the butter. Let the butter melt and continue to saute everything until the mixture starts sticking to the bottom of the pan a little bit.
Add the cup of broth to deglaze the pan. Allow the whole mixture to cook down a little bit. The butter and broth will thicken into a caramelized sauce after a few minutes.
Remove from heat and add the cooked pasta and Parmesan cheese to the skillet. Mix it all together to combine. Serve right away. It really doesn’t need salt and pepper because the sausage is so salty, but you can add fresh ground pepper at any point of the cooking depending on the flavor of the chicken sausage.
